In response to a comment on my last post, here are some of ideas for using rice and beans to make a great, frugal lunch or dinner:

Rice with Black Beans & Sauce

Cook black beans (or use canned) in a saucepan. Add some onion, garlic, salt, and pepper. Serve beans with their natural sauce over white or brown rice.

Rice and Bean Mix-up

  • Heat a few tablespoons of oil in a big skillet or wok
  • Add some frozen or fresh vegetables (carrots, great beans, peas, etc.)
  • Add several cups of cooked beans (black, pinto, or red beans)
  • Add a heaping amount of cooked rice (white or brown)
  • Stir in a little bit of ketchup, worchestershire sauce, salt, pepper, garlic, or other seasonings to taste
Mexican-style Rice and Beans
  • Heat a few tablespoons of oil in a large skillet or wok
  • Add several cups of beans (black, pinto, or red)
  • Add a heaping amount of cooked rice (white or brown)
  • Add a can of diced tomatoes, or stewed tomatoes
  • Add some salsa, some garlic, onions, salt, pepper, etc
  • Top with salsa and cheese!
Did you know that more than half of the world’s population depends on rice (and sometimes beans) as their primary food? Rice and beans are such a simple, frugal meal. They can also be bought in bulk and stored easily!
